Dinner in Buenos Aires starts at ten. Not as a flourish, and not only at weekends: restaurants open at eight and are largely empty until nine thirty, the room fills at ten, and the second sitting runs past midnight. If you arrive at eight because that is when you eat at home, you will have the dining room to yourself and conclude the restaurant is failing.
This single fact shapes where you should stay, because it means every evening ends with a walk or a car at one in the morning. Being able to walk home from dinner is worth more here than in almost any other city.
Why the neighbourhood matters more than the hotel
Buenos Aires is enormous and spread flat, and its good restaurants are concentrated in two areas that are twenty-five minutes apart by car. Palermo, particularly Palermo Soho and Palermo Hollywood, holds most of the modern cooking, the wine bars and the parrillas that people fly in for. Recoleta is grander, older and quieter, with the classic restaurants and the museums.
Staying in one and eating in the other means a taxi each way, every night, in a city where late-night transport is fine but not free. Staying in the right one means you walk fifteen minutes home through streets that are still busy at one in the morning.

San Telmo is excluded, and it is the most atmospheric neighbourhood in the city. Its hotels are small and characterful and you take a car home from dinner, which is the specific thing this article is trying to avoid.
What to do between meals
Eat beef properly, at a parrilla, at ten at night, and order a bife de chorizo or an ojo de bife with a malbec. Then eat somewhere modern in Palermo the following night, because the current cooking here is as good as anywhere in Latin America.
Go to the Recoleta cemetery early. See the Teatro Colon, which is one of the three or four best opera houses in the world, on a tour or ideally for a performance.
Watch tango properly rather than at a dinner show. The milongas, where locals dance, run late and welcome watchers. San Telmo on a Sunday for the market and the street tango.
Walk Palermo's parks on a weekend, take the ferry to Colonia in Uruguay for a day, and buy leather, which remains genuinely good value.
Practical notes
Ezeiza international airport is 45 minutes to an hour from the centre. Aeroparque, for domestic and regional flights, is 15 minutes. Use a booked remis or an app rather than a street taxi.
October to December and March to May are the best windows. January and February are hot and many locals leave. June to August is mild and grey and the city is at its most atmospheric.
Currency and payment arrangements in Argentina change frequently; check the current position on cards versus cash close to your travel date rather than relying on older advice.
