Almost every trip to French Polynesia passes through Papeete. Faa'a is the only international airport in a territory spread across an area of ocean the size of western Europe, and the connecting flights to Bora Bora, Moorea and the Tuamotus leave from it.
The flights from Los Angeles and Paris tend to land late at night or very early in the morning, and the domestic connections do not always line up. Which means a great many visitors spend a night on Tahiti whether they planned to or not, treat it as dead time, and see nothing.
That is a waste, because Tahiti is the only island in the territory with a functioning town.
What is actually here
Papeete has the Marché de Papeete, a covered market on two floors selling fish, fruit, vanilla and tifaifai quilts, busiest very early in the morning. It has the waterfront food trucks, les roulottes, that set up at dusk on the Place Vaiete. It has the cathedral, the black pearl dealers and the only real restaurant scene in French Polynesia.
The west coast, at Punaauia and Faa'a, has the hotels, a lagoon, and the Museum of Tahiti and the Islands.
The interior is a volcanic massif rising to 2,241 metres with waterfalls and the Papenoo valley, reachable by four-wheel drive.
Tahiti Iti, the smaller peninsula joined to the main island by an isthmus, has Teahupo'o, which produces one of the heaviest waves in the world and hosts a championship surf event.
The beaches are mostly black volcanic sand. If you want white sand and a lagoon, that is what the other islands are for. Tahiti is for the town, the mountains and the food.

Punaauia and the west coast lagoon
Fifteen to twenty minutes south of the airport, on the water.

Hilton Hotel Tahiti occupies a building in central Papeete with a rooftop pool over the harbour, the market a short walk away and the roulottes at the waterfront. It is the only hotel at this standard actually in the town.

The pensions de famille across Tahiti are excluded. They are the standard accommodation in French Polynesia, family-run and inexpensive, and on Tahiti Iti in particular they are how you stay near Teahupo'o. They are guest houses rather than hotels.
What to do with one night
Go to the market at six in the morning. The Marché de Papeete is at its best before the day gets going and it is the most alive place in the territory.
Eat at the roulottes on the Place Vaiete after dark. Food trucks selling chow mein, steak frites, raw fish in coconut milk and crêpes, with plastic chairs and no ceremony. It is the best value meal in French Polynesia by a very wide margin.
Drive the coast road as far as the Arahoho blowhole and the Faarumai waterfalls, about forty minutes east.
See the Museum of Tahiti and the Islands at Punaauia, which explains the Polynesian navigation that settled an ocean and is far better than most people expect.
Buy black pearls in Papeete rather than at a resort boutique, and learn what makes one worth the money before you do.
Practical notes
Faa'a is a short drive from the western hotels and from Papeete. Domestic flights to Moorea, Bora Bora and the Tuamotus go from the same airport; the ferry to Moorea leaves from Papeete harbour.
May to October is the dry season and the best window. November to April is warmer, wetter and inside the cyclone risk period.
French Polynesia is expensive. The roulottes and the market are the exceptions and they are excellent.
